It is I suspect less of The Sun backing winners (which they could have publicly predicted at the beginning of the campaign) and more a case of knowing which way the wind is blowing. On this issue the Sun is not wrong. You can be sure that if remain were in the lead the Sun would be pressuring their readers to vote Remain
